Vodka Sauce

Ingredients

Olive oil
4-5 cloves garlic
6 oz tomato paste
1/4 cup vodka
3 cups half and half
2 tsp salt or to taste
Pepper
Pinch of red pepper flakes

To Serve:
Pasta of choice, such as penne or rigatoni
Parmesan
Basil

Directions

Chop or grate the garlic finely and set aside.

Gently heat a couple tablespoons of olive oil on low-medium heat. Add the garlic and a pinch of red pepper flakes and sauté until soft.

Once the garlic is ready, add the tomato paste to the pan.

Stir the mixture constantly for a few minutes for the flavors to caramelize and deepen. The tomato paste will thicken and turn a dark red.

The Secret Ingredient

Once the tomato paste is cooked through, reduce the heat and deglaze the pan by pouring in the vodka and stirring. Feel free to scrape off any bits that may be stuck to the bottom.
Let the mixture simmer on low heat for a few minutes.

Bringing It All Together

Gently pour in the half and half to the tomato vodka mixture and whisk together until thoroughly combined. If the mixture is a little runny, allow it to simmer for a few minutes until it thickens up. If it's too thick, add a little bit more cream.

The vodka will add punch and enhance the flavors of the sauce but not take over. If the alcohol flavor is too strong and pronounced for your taste, just allow it to simmer a little longer.

Season with salt and pepper to taste.

Prepare The Pasta

While the sauce is simmering, add salt to a pot of water and bring it to a boil. Cook your pasta of choice until el dente, according to the package instructions.

Reserve about a 1/4 cup of the starchy pasta liquid once the pasta is cooked and stir it into the vodka sauce.

When ready to eat, add the pasta to the sauce and stir to combine.

The Finishing Touches

To serve, grate the parmesan on top and sprinkle with chopped basil. Feel free to add more pepper and chili flakes to taste.
